Hyderabadi Dum Biryani is one of India's most celebrated dishes — fragrant basmati rice layered
with marinated chicken, slow-cooked "on dum" (sealed steam) to lock in every bit of flavor. This
recipe brings the authentic Hyderabadi taste right to your kitchen.
Ingredients :
For the Chicken Marinade
• 1 kg chicken, curry-cut pieces
• 1 cup thick curd (yogurt)
• 2 tbsp ginger-garlic paste
• 3 green chilies, slit
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tbsp biryani masala powder
• 2 tbsp fried onions (birista)
• 2 tbsp mint leaves, chopped
• 2 tbsp coriander leaves, chopped
• 2 tbsp lemon juice
• Salt to taste
• 3 tbsp ghee or oil
• 1 cup thick curd (yogurt)
• 2 tbsp ginger-garlic paste
• 3 green chilies, slit
• 1 tsp red chili powder
• 1/2 tsp turmeric powder
• 1 tbsp biryani masala powder
• 2 tbsp fried onions (birista)
• 2 tbsp mint leaves, chopped
• 2 tbsp coriander leaves, chopped
• 2 tbsp lemon juice
• Salt to taste
• 3 tbsp ghee or oil

For the Rice :
• 500 g basmati rice (aged, long grain), soaked 30 minutes
• 1 bay leaf
• 4-5 green cardamoms
• 4 cloves
• 1 inch cinnamon stick
• 1 star anise
• Salt to taste
• Water for boiling
For Layering and Dum :
• A few strands of saffron soaked in 3 tbsp warm milk
• 2 tbsp ghee
• Fried onions (birista)
• Fresh mint and coriander leaves
• Wheat flour dough (to seal the pot) or a tight lid
Method :
Step 1: Marinate the Chicken
In a large bowl, mix the chicken with curd, ginger-garlic paste, green chilies, red chili powder,
turmeric, biryani masala, fried onions, mint, coriander, lemon juice, salt, and ghee. Mix well, cover,
and let it marinate for at least 2 hours, ideally overnight in the refrigerator.
Step 2: Par-Boil the Rice
Bring a large pot of water to a boil with bay leaf, cardamom, cloves, cinnamon, star anise, and salt.
Add the soaked rice and cook until it's about 70% done — the grains should still have a slight bite.
Drain immediately and set aside.
Step 3: Layer the Biryani
In a heavy-bottomed pot (handi), spread the marinated chicken evenly at the bottom. Layer the
partially cooked rice on top. Sprinkle saffron milk, a drizzle of ghee, fried onions, and chopped mint
and coriander over the rice.
Step 4: Seal and Cook on Dum
Cover the pot tightly — traditionally sealed with wheat dough around the lid to trap the steam
completely. Cook on high heat for 3-4 minutes, then reduce to the lowest possible flame and cook
for 45-50 minutes. If you have a tawa (griddle), place the pot on it to prevent the bottom from
burning.
Step 5: Rest and Serve
Turn off the heat and let the biryani rest for 10 minutes before opening the seal. Gently fluff and
mix the layers from bottom to top. Serve hot with raita, mirchi ka salan, or a simple onion salad.

• Don't skip the resting time after cooking — it lets the flavors settle.
• Fresh, good-quality fried onions make a big difference in flavor.
