Method:

To make the dough, mix the flour, salt and ghee or oil in a mixing bowl. Mix well till the mixture resembles breadcrumbs.

Gradually add water and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

To make the filling, wash the moong dal thoroughly and soak it in water for 2-3 hours.

Drain the water and grind the dal in a mixer-grinder to a coarse paste.

Heat oil in a pan and add cumin seeds and fennel seeds. Once they splutter, add green chillies and grated ginger. Sauté for a few seconds.

Add the ground dal, turmeric powder, coriander powder, red chilli powder and salt. Mix well and cook on low heat until the mixture becomes dry. Turn off the heat and let it cool down.

Now, divide the dough into small lemon-sized balls. Take one ball and roll it into a small circle.

Place a tablespoon of the filling in the center of the circle.

Gently gather the edges of the circle and pinch them together to make a pouch. Repeat with the remaining dough and filling.

Heat oil in a deep pan for frying. Once the oil is hot, reduce the heat to medium and add a few kachoris at a time. Fry them until they turn golden brown and crisp.

Serve hot with green chutney or tamarind chutney.

Variations:

Pyaaz ki Kachori: Add finely chopped onions to the filling mixture along with the other spices.

Matar ki Kachori: Add boiled and mashed green peas to the filling mixture along with the other spices.

Hing ki Kachori: Add a pinch of asafoetida (hing) to the filling mixture along with the other spices.

Khasta Kachori: Increase the amount of ghee or oil in the dough to make it more crispy.
